Our apples are picked and sorted by hand, then pressed by
individual variety.
Each type of apple is then fermented for several months.
A blend is developed that optimizes the balance of sweet,
sharp, and bitter tastes, which is further fermented to
develop the flavour and aroma of our cider.
A final fermentation occurs after bottling; the process,
like wine, takes over a year from fruit to bottle.
